The Inspiration for gfmama's...
At the beginning…
My 3 kids and my niece and nephew were my catalyst to discover/create new recipes. We used to make up recipes and then cook them and see how they would taste. My background in science (Biology degree) helped me to be confident to attempt this. It was fun!
Our early creations reflected a 'mimicking' of foods found in a traditional American diet. We made cookies, breads, mac n' cheese, burger buns, etc. In order to make them better, we had to add lots of honey, maple syrup or turbinado sugar. Then we advanced to making ketchup, dressings, chicken strips, etc. I used a lot of rice flour to begin, but over time we began to have trouble.
Then we continued on to almond flour, and almond milk. It is delicious, but full of calories. Sadly, my daughter began to have trouble with nuts...ugh! So out with the nuts, and back to the drawing board.
Several years ago, Mae and I decided to go grain free and gluten free. We began to feel better, and the digestive issues with nuts went away. What plagued us, though, were the energy (blood-sugar) up and downs throughout the day. We would be fine...and then all of the sudden we were desperate to eat anything!
When you get to this phase, it is almost impossible to make good eating decisions. We were stumped! We read a lot of material, and decided to cut out sugars. It was a sad day! Or so we thought.
It was still an up and down battle, and we noticed we had an all or nothing reaction to sugarcane. Mae was brave and after a visit to our favorite doctor, decided to go sugar free. She didn't even eat stevia (my favorite) for a while.
In the course of a month, she lost about 15 pounds of inflammation and looked and felt great! She was on to something, because she wasn't limiting other foods. In January, I followed suit with sugarcane, leaving stevia and raw honey in my diet. I also began to shed inflammation naturally, and effortlessly. Wow!
We have learned so much and have changed our mindset about eating. Travelling, one of our passions, became a scary thing for a while. We didn't know what to eat, and often got sick no matter what we chose to eat.
Those days are part of our past history. Equiped with a new mindset towards eating, we are free. Free to enjoy, free to travel, and free to feel good!
Why this change? We think differently, and are training ourselves to listen to our bodies. When something doesn't seem right, we stop. Now that we are grasses-genus free, our minds can 'hear' our bodies talking.
We didn’t put together that the members of the grasses-genus were our problem at one time, it came incrementally. Wheat, rye, barley, oat, sorghum, millet, corn, rice and sugarcane are all part of the SAME FAMILY. My family famously has ‘hay-fever’. I’ve known that since I was a child….so if we can’t breath them, then why would we be eating them! Today, it’s a no-brainer for us and we are healthy, happy, and look forward to a long life to be enjoyed!
That is the why behind our creation of gfmama's. You and I were meant to enjoy foods and feel good. We have developed recipes for really really good foods that are good for you. It is time to share that with you all.
